This wine is a collaboration with The Grape Witches, Toronto. Early in the year they came to us looking for a fun wine. Enter Frontenac Noir. As a hybrid, it ripens early and is perfect for a bit of carbonic fermentation!
This fruit comes from a vineyard in Plainfield, in the Moira River watershed, 20 minutes north of Belleville, Ontario. Fermented in what we call ‘Juice Boxes’ these grapes underwent carbonic maceration for 1 week before being pressed and left to settle for 2 weeks before bottling. Bottled with an estimated pressure of 1 bar for light, gentle bubbles.
How does it drink? Straight up bubble gum and fizz candy meet in the middle. Carried along by their effervescent-filled friend: alcohol. Fun!
