The wine was fermented with natural yeast and took about a month to reach dryness. Ferments were punched down at least once per day. If any yeast appeared to be struggling the ferments were pumped over. Pressed gently after three weeks on the skins and settled in tank off heavy lees. The wine was put to barrel at the start of 2017 into neutral French oak barrels – chosen to highlight the perfect growing conditions of 2016 and the beautiful fruit harvested from the Foxcroft Vineyard. \u003c\/div\u003e\n\u003c\/div\u003e\n\u003cp data-mce-fragment=\"1\"\u003eA dark and earthy Cabernet Franc with notes of black pepper and blackberries on the nose.
