“In 2016 the fruit is from Wismer-Foxcroft only and the winemaking made use of the 2015 barrels. This is really textured and multi-layered chardonnay, not exactly creamy but more akin to things or layers that add up to creamy, like the hand work needed to whip air into cream. Great acidity and a classic flinty-lees-nutty-citrus Foxcroft profile. With a totally unfiltered methodology this is purely and expressly a matter of vintage and vineyard. Just transparent, clean and bloody delicious chardonnay, in balance and wholly fortuitous for all. Quality doesn't come cheap but you get what you pay for. Drink 2018-2022.”

This wine fermented naturally in stainless steel. It was transferred to French oak to complete fermentation. Natural malolactic was completed in full while ageing on lees in barrel. The wine was racked out of barrel after 1 year, allowed to settle and racked once for further clarity. A minimal amount of sulphur was added. Bottled unfined and unfiltered.

A nose layered with spice pear, wet stone and floral notes. Creamy minerality on
the midpalate with a long, steely finish.
