“Few winemakers in Ontario are as curious, aloof and serious about making gewürztraminer like this: a gewürz that finishes dry (under 3 g/L) so delicate for a customer’s palate, with lots of lemon and lime but never searing, perfect for cold smoked or tataki prepared salmon. Bitter pith note but it dissipates, as does the acidity so keep in mind this is floral and fine. Drink 2018-2021.

A wild-ferment Gewürztraminer with delicate notes of wild blossoms, lychee and
kiwi. This wine is light and dry, yet richly textured from aging in neutral oak —
Enjoy as the perfect aperitif.

Hand harvested from the Lakeview Vineyard on September 20, 2016. The wine
was crafted to express the delicacy of fruit from the Lakeview vineyard. Extra care
was taken so as not to over extract the often rich aromatics of Gewürztraminer. 
The grapes were pressed whole cluster and aged in neutral oak barrels. Bottled in September of 2017.
