“Crazy amount of reduction (and) so much beauty by way of orchard to stone fruit. There’s a creamy apple custard vitalized by pulse and energy with good bite and it feels very seasoned, on it’s own, religiously made, slowly developed and with purpose. The acids are spot on. Bottled in November, wisdom already contained, herein. Drink 2019-2023.”

“Both the County and Niagara Unfiltered Chards have become signature wines and light the way for the rest of the portfolio that takes many interesting twists and turns. Such an enticingly reductive nose of flinty minerals, pear, pithy citrus, apple skin and just a hint of fine oak spice. On the palate, flavours of stone fruits and citrus are driven by pure County acidity and pristine salinity that shine a bright light on a finessed and lightly spiced finish.”
Perfectly ripe fruit was harvested from our estate early October, by hand. Wild-fermented and put to barrel half-way through the ferment. All-French barrels were used with a final ratio of 22% New, 22% 2nd-fill and 56% neutral oak in both 225L and 500L sizes. Bottled unfined and unfiltered with only minimal sulphurs at bottling.
A bouquet of bright pithy lemon with the slightest touch of oak. A subtle, delicate palate with crisp mineral-driven acidity and a long, lingering finish. Classic, beautiful and pure County Chardonnay.
