The grapes in this wine come from several vineyards both in the County and Niagara. Fermented entirely with skins-on. Consisting of 35% Muscat Ottonel, 32% Viogier, 25% Riesling and 8%
Each variety was fermented naturally on skins for a few days before pressing and blending. Fermented naturally and very slowly at a cool temperature this wine took a month to reach almost dryness. Racked 3 times to clarify and then mixed during bottling for uniformity. Bottled with 10 g/L residual sugar at the start of November 2019.
Light and refreshing and layered with complexity. In its youth this wine is fresh,
fruity and slightly sweet. After fermentation completes in bottle it is citrus driven
with great acidity and length from the time on skins and a pleasant layer of
Bottled without the addition of any yeasts, sugars or sulphurs — yielding naturally-ocurring bubbles. Unfined and unfiltered. Serve chilled and handle gently. Drink young. Enjoy!
Note: some foaming-over is normal with Pet Nats. To minimize this make sure wine is well chilled and open cap very slowly, wait a couple minutes and remove cap entirely.
