Hand harvested from a vineyard down the road from the winery adjacent to the banks of Lake Ontario. Fermented naturally for 15 days on skins before being pressed and put to neutral barrels for 1 year to age. Racked out of barrel and bottled unfined and unfiltered with 20 ppm sulfur added.
Bitter orange, clove and herbal notes reminiscent of Campari, the palate of this wine is absolutely on fire – full with layers of acidity and tannin. Tart, flavourful perfection. Magnums will be released at a future date, after further aging in bottle.
