Pressed whole cluster to tank, settled without temperature control for a day and racked to barrel. This wine fermented very slowly, stopped over the winter, and continued to ferment the last grams of sugar in the spring. Completing full malolactic fermentation this wine was bottled in August of 2021, having aged in barrel for 11 months. Bottled unfined and unfiltered with minimal sulphurs only at bottling (30ppm).
Exuberant and lush, aromatics of apricot and passion fruit puree lathered on a brioche bun. On the palate this wine shows richness and is best served cold (like revenge!).
