Fermented naturally and punched down twice daily before being pressed and put directly to neutral oak barrels. On the skins for 13 days. This wine aged in barrels for 11 months before being bottled with a minimal amount of sulphur, unfined and unfiltered.

This wine always exhibits intense aromatics of orange and lemon zest.
