Hand harvested and fermented naturally in a neutral 500 L barrel for 1 year before being bottled unfined and unfiltered with 20 ppm sulphur added at bottling.
Light pepper, delicate peaches and beautiful perfume on the nose with a hint of oiliness on the palate balanced with beautiful structure. Like the bees swarmed the flower patch and got the most floral honey!
