42% Geisenheim, 37% Chardonnay, 21% Gewürztraminer
Gewürztraminer and Geisenheim were hand harvested, destemmed and fermented on the skins for 10 days before pressing alongside the Chardonnay. The Chardonnay was harvested and fermented whole cluster (after some rowdy foot stomping) for 2 days before being pressed along with the other components. Fermented to dryness and bottled with a small amount of juice added back in to create carbonation.
Sweet aromatics of apple and nectarine with a light citrus core. Slightly carbonated, medium acidity and mildly tannic. Like all your dreams have come true and floated across to you on a bed of herbs and flowers.
