About the 2016 Vintage:

A lighter and fresher style of Baco Noir released only a few months after harvest. Made without the use of oak, with notes of cherry, violets and candied berries. An easy drinking, and delicious red.

This Baco was made in the style of that “other” new-wine wine region — the full, ripe, berry clusters were put into a tank and a film of C02 added to the top (displacing oxygen). By gravity, the berries at the bottom are slightly crushed and start the ferment. As the majority of berries are unbroken, fermentation happens inside the berry yielding fresh, pure flavours.
