Apple, Chard, Riesling: A blend of apple pomace, water and an experimental project of Chardonnay and Riesling left to age on the lees for 5 years. In 2016 we did a traditional method trial of about 10 cases of Riesling and Chardonnay. Using some of our 2015 Chardonnay and our 2015 Barrel Fermented Chardonnay we added a calculated amount of yeast and sugar to create carbonation. The resulting wine was too low in acid, but over the years developed a rich and smooth palate from the extended lees aging. The apple piquette was tasting a bit too tart so it seemed like a match made in heaven. Waste-not-want-not!
Sauv. Blanc & Lavender: Made up of a blend of sauvignon blanc skins, water, recovered lees and lavender from our gardens. The blend was fermented dry and bottled with an addition of Chardonnay juice to create carbonation. A slight flor formed on this wine and will continue to form in bottle. Light and airy, with a hint of lavender and a sour finish.
