Trail Estate Riesling skins and stems were pressed, put to bin and topped up with water. The piquette rested on skins with punchdowns for 2 days prior to pressing. An addition of fermented 2023 Verjus was added to create acidity, Infused with lemon balm and basil flowers grown in the Wine Forest at Trail Estate. Bottled with added juice to create about 2 bar pressure.
A light, wine-like thing! This piquette showcases delicate waxy, lemon notes interlaced with basil flower. Slightly effervescent on the palate.
