“This is lighter in colour in the glass but big on the nose with wild raspberries, plums, herbs, dark cherries, spices and floral notes. Bright and lively on the palate with a melange of red berries, purple plums, herbs, anise with some tannic structure and a bright, finessed finish. Can cellar to 2028.
Fermented naturally with two punchdowns twice daily. This wine was pressed after two weeks on skins, settled and put to barrel to age for three years in mostly 3rd-fill and neutral French oak. Racked out of barrel prior to bottling, settled and racked once more. Bottled unfined and unfiltered. Characteristically Cabernet Franc from Ontario in a cool year!
Bright lemon and raspberry on the nose with a hint of almond and acetone. The palate tastes of crushed wild strawberries in the hot sun, with a hint of black pepper and lemon wedges. Mild tannins and a solid acid backbone. Best 2025-2030.
