Rhubarb and Thyme Cocktail
1 oz. Tequila
0.5 oz. Aperol
0.5 oz. Strawberry Preserves
0.5. oz Lemon Juice

Shake into a coupe glass over ice
Top with 3 oz. of Piquette
Thyme sprig and strawberry fan garnish

rail Estate Chardonnay skins and stems were pressed, put to bin and topped up with water. The piquette rested on skins with punchdowns for 3 days prior to pressing. An addition of fermented 2023 Verjus was added to create acidity, Infused with rhubarb, thyme, mint and rosemary grown in the Wine Forest at Trail Estate. Bottled with added juice to create about 2 bar pressure.

Aromas of sour dough bread and thyme. The palate showcases hints of mint and rosemary with an acidity and finish influenced by the rhubarb.A light, wine-like thing!
