An intriguing blend of 60% Petite Pearl and 40% Viognier — both organically-farmed. Both varieties were whole cluster pressed and blended for fermentation. Fermented naturally until dryness and allowed to settle for 3 weeks prior to bottling with a small addition of juice to create carbonation.
Beautiful light red in colour with chalky red cherries and red licorice aromatics. A candied wine with sugared fruit and crisp acidity bringing flavours of currants and cranberries, followed up with a spiced finish.
