2019 ‘Velo’ Skin-Ferment Gewürztraminer
Hand harvested from the Velo Vineyard, down the road from us in PEC, adjacent to the banks of Lake Ontario. Fermented naturally for 15 days on skins before being pressed and put to neutral barrels for 1 year to age. Racked out of barrel and bottled unfined and unfiltered with 20 ppm sulfur added.

Bitter orange, clove and herbal notes reminiscent of Campari, the palate of this wine is absolutely on fire — full with layers of acidity and tannin. Tart, flavourful perfection. Magnums will be released at a future date, after further aging in bottle.

2020 ‘Glen Elgin’ Skin-Ferment Gewürztraminer

Hand harvested fruit was destemmed and put to cylindrical tanks where the control of skin to juice ratio could be minimized. On the skins for 13 days. This wine aged in barrels for 11 months before being bottled with a minimal amount of sulphur, unfined and unfiltered. 

This wine always exhibits intense aromatics of orange and lemon zest. The 2020 has a faintly floral note like rose petals as they are drying. The palate is light with bright acidity and mild tannins that leave you with a dry finish. 

2021 ‘Foxcroft’ Skin-Ferment Gewürztraminer
Hand harvested fruit was destemmed and pumped over at the start of fermentation to build up a yeast population. Pressed after 14 days on skins and put to barrel to age. Aged for 7 months in 2 neutral barrels.

Eldeberry, rose and orange peel on the nose. This wine is bursting with flavour from the nose to the palate. Notes of honey and peach interlace on the palate with a soft tannins and a slight bitterness. Reminiscent of an apertif-style drink and perfect for sipping or pairing savoury things!
