The charming and natural beauty of a chardonnay originally locked in by a self-reflecting reductive tendency now emerges with full mellifluous smoulder and a honeyed smokiness. Even if at that time it was not realized as such. Now quite clear as a virtuoso soloist’s performance only made possible by chances taken, through the scientific experimentation of a winemaker with a sense of wonder. This performance of Foxcroft fruit has not been noted before and neither will it be repeated. The feeling however dictates the next and the next will do more. Bring on 2018. Despite being from a cooler year, this is a very rich example of the Foxcroft vineyard. Showing ripe notes of peaches, melon and beeswax overtop of a full and velvety palate.
Pressed and cold settled before starting a natural fermentation. Put to barrel when sugars were half depleted. All French oak used, 35% new, 50% 3rd fill and 15% neutral. Completed full natural malolactic fermentation before coming out of barrel after 10 months ageing.
