Hand harvested from our vineyard, destemmed and cold soaked for two days prior to kicking off a natural ferment. Pumped over at the beginning of fermentation and later punched down twice daily. Macerated for 12 days prior to pressing. Racked to barrel to age. Racked once in the summer of 2022. Aged in barrel until July of 2023.
Lean aromatics, a clear, bright and delicate wine. Spiced cherry with a slight lemon
note, and a hint of peat. This wine has a light palate with a delicate tannin structure.
