2023 Piquette — Viognier, Apple & Spice

Viognier Spiced Apple Cocktail
1 oz. Calvados
0.5 oz. Drambuie
0.5 oz. Honey Syrup
0.75 oz. Lemon Juice
Shake, strain into a Collin’s on ice
Top with 3 oz. of Piquette
Apple for garnish
Pressed Viognier skins and stems were loaded into a bin and topped up with water and a small addition of fermented verjus for acidity. Fermented for 6 days on skins with punch downs before liquid was pumped out. This Piquette was not pressed - keeping it lighter than the others. Blended with fermented apple cider, star anise, cloves and cinnamon. Bottled with a small addition of juice to create carbonation.
Cloves and cinnamon dominate the nose with light apple notes coming through. A very delicate palate with a touch of bubbles.
