2021 White Pét Nat
32% Gewürztraminer, 30% Sauvignon Blanc, 29% Viognier and 9% Riesling.
The various grapes were harvested through late September and early October of 2021. Fruit was destemmed and fermented on skins for 6 to 10 days before being pressed and put to a temperature controlled tank. We fermented this wine slowly  for great aromatics. The ferment was slowed down and halted when the Brix read just under 1. The wine was bottled at a dissolved carbon dioxide level of 2480 mg/L with 6-7 g/L residual sugar.

A lightly aromatic wine with a savoury note from in-bottle yeast aging and time on skins. Perfect for the heat on a Canadian summer, it’s exotically spiced — notes of Guava, kiwi and nectarines — slightly funky yet lightly effervescent palate. Serve fully chilled.

2022 White Pét Nat
60% Riesling & 40% Sauvignon Blanc
Sauvignon Blanc grapes were hand destemmed and fermented naturally for 8 days before being pressed. Later harvested Riesling was fermented on its skins for 6 days before pressing. Blended with Sauvignon Blanc and fermented under temperature control until the desired sugar level was reached. Bottled with an aim of 4.5 bar.     

Tastes like candy apples with wafts of sweet perfume floating through the air. Mild acidity with flavours of a Normandy cider carried through to the finish with fine bubbles.Wild Ferment. Unfiltered. Unsulphured. Drink well chilled.

2021 Red Pét Nat
“This pét-nat is a riot of purple haze fruit, and and brilliantly chaotic. An interesting nose of savoury wild blackberries, anise, cherry cola, black raspberries, and minty herbs. It’s already showing a vigorous mousse in the glass and lights up on the palate with a mix of red and dark berries, a basket of herbs, earthy/savoury notes and a bright, lifted finish.

Consisting of 40% Riesling, 37% Baco Noir and 23% Cabernet Franc. A beautiful and naturally carbonated wine with cherry menthol notes and a hint of rosemary throughout the nose and palate. High acid and light bubbles shortly after bottling. Light bubbles will get more vigorous (and the wine drier) over time — this is still a young wine. It’s showing lovely notes of berries — blackberries, cherries, strawberry and currants. Finishes with savoury spice and complexity — think beets (slightly meaty), rosehip tea, tarragon and clove.
